My recent creation was a Ground Lamb & Hummus bowl. The bowl consisted of a few simple ingredients.

The only complex thing was the spices for the Ground Lamb.

Ground Lamb & Hummus Bowl

Ingredients
  

  • 12 oz Ground Lamb
  • Basmati Rice
  • Dill (Fresh)
  • Romaine Lettuce Cut
  • Diced Tomatoes
  • Garlic & Herb Crumbled Feta Cheese
  • Stone Fire Mini Naan Bread
  • Roasted Red Pepper Hummus
  • Hidden Valley Yogurt Dressing Cucumber & Dill
  • Mediterranean Seasoning
  • Kosher salt
  • Cumin
  • Parsley
  • Thyme
  • Basil
  • Oregano
  • Bay Leaves
  • Paprika
  • Cilantro
  • Coriander
  • Onions (Diced)
  • Bell Peppers (Diced)

Ingredients:
  • Ground Lamb

  • Lettuce
  • Tomatoes
  • Garlic & Herb Crumbled Feta Cheese

  • Hidden Valley Yogurt Dressing, Cucumber Dill

Lamb Spices
  • Cumin
  • Parsley
  • Oregano
  • Thyme
  • Dill Weed
  • Coriander
  • Cilantro
  • Paprika
  • Kosher Salt

Directions:
  1. Season the Ground Lamb with spices listed above. Season generously. Set Aside.
  2. Cook basmati rice. Just like normal rice but season with a little salt and some of the mediterranean spices. You can find a mediterranean spice blend in the store for the rice. Someone sent me a pack of the mediterranean spices. Prepare in a Regular rice cooker. Once done set aside.
  3. Add Olive oil to skillet, heat and saute bell peppers and onions.
  4. Add ground lamb. Cook until brown. Taste. Add more spices if desired. Set aside.
  5. Slice the cucumbers.
  6. Dice the tomatoes.
  7. Cut the lettuce.
  8. Warm the Naan. Set aside.
  9. Build the bowl, Rice, Ground Lamb, Hummus, Lettuce, tomatoes, cucumber and dill dressing topped with feta cheese on the side of the bowl. Add hummus and sliced cucumbers. Add naan and garnish with fresh dill.
Simple and easy. Plus it's a healthier dinner options. Perfect even for the kiddos. Enjoy!
