Breakfast is the most important meal of the day. Creating dishes that are not only quick and easy but tasty for breakfast is a must.

Most people don’t have a lot of time to spare when creating breakfast dishes.

I recently created a Ham & Egg Muffin for my family and they loved it.

In the Ham & Egg Muffin is a new product that I was able to collaborate with called Clifty Farm Country Ham. 

Here is a little information about Clifty Farms, “When our country hams first went on sale back in 1954, it soon became evident that curing and selling country hams was to become a family tradition.

Truman Murphey, the founder of Clifty Farm, grew up down in the country around Paris, Tennessee. Truman remembered the day when every farmer cured his own hams.

Today, Truman’s grandson, Michael, is now overseeing the family business, replacing his father Dan, who passed away in 2016. Michael started working in the business as a teenager and is now president of Clifty Farm Country Meats. As a matter of fact, the whole Murphey family is deeply involved in carrying on the Clifty Farm family tradition”.

 

Ham & Egg Muffins

Egg Muffins can include so many variations of ingredients. For this recipe, a Ham & Egg Muffin. Don't forget the cheese and veggies. Yum. Great make ahead item with the holidays coming up.

Total Time 28 minutes

Ingredients
  

  • 1 Diced red bell peppers
  • 1 Diced Orange Bell Pepper
  • 8 brown eggs scrambled
  • Clifty Farms Ham Diced
  • Diced White Onions
  • Onion Powder for eggs
  • Garlic Powder for eggs
  • Smoked Paprika for eggs
  • Fresh Parsley Garnish
  • Shredded Cheese Blend
  • Lactaid Milk A few splashes
  • Muffin Tin
  • olive oil
  • Pam Spray

The Holidays are here! This Ham & Egg Muffin is a great breakfast or brunch item to serve your family for the Holidays. Not to mention it's easy and you can incorporate the kids in the prepping.

Ingredients:
  • Red Bell Peppers
  • Orange Bell Peppers
  • White Onion
  • Clifty Farms Ham
  • Eggs
  • Onion Powder
  • Garlic Powder
  • Smoked Paprika
  • Cheese Blend
  • Parsley
  • Muffin tins
  • Olive Oil
  • Pam Spray

Directions:
  1. Saute onions and bell peppers in a pan with olive oil. Set aside.
  2. Add olive oil, small amount, Fry the Ham on both sides until cooked. Remove and dice the ham into small bite size pieces. Set aside.
  3. Scramble eggs, few splashes of milk and onion & garlic powder and smoked paprika. Set aside.
  4. Preheat oven to 375 degrees.
  5. Dice the ham. Set aside
  6. Spray tin with Pam.
  7. Pour eggs in each tin.
  8. Add onions and bell peppers to each tin.
  9. Add cheese to each tin.
  10. Lastly add the ham.
  11. Bake on 375 degrees for 10 - 14 minutes.
  12. Garnish with fresh herbs to serve.
