Toast is one of my go to items for breakfast. Traditionally toast is prepared with bread, jelly and butter. But today, I am bringing a new spin on breakfast toast. Introducing my Sweet Potato Toast. This toast would make a great Saturday brunch as well.

Sweet Potato Toast

Ingredients
  

  • 2 Sweet Potatoes
  • Proscuitto
  • Balsalmic Vinegar
  • Goat Cheese
  • Morton Salt
  • Crushed Black Pepper

  1. Preheat oven to 400 degrees.
  2. Peel sweet potatoes
  3. Slice sweet potatoes in a decent size slice.
  4. Drizzle with olive oil.
  5. Season with kosher salt.
  6. Bake at 400 degrees for 15-20 minutes. Bake until tender. The cook time could vary depending on the thickness of the sweet potato slice.
  7. Remove from the oven.
  8. Top the sweet potatoes with sliced prosciutto.
  9. Add goat cheese on top.
  10. Drizzle with balsalmic vinegar.
  11. Garnish with Alfalfa Sprouts.
  12. Season with salt and pepper.
  13. Serve.
