Spicy Chicken Sliders

March Madness is here and it has been MADNESS! Omg! Nail biting games, major upsets and just good games. Whether you are watching NCAA Men or Women’s basketball March Madness has been entertaining for sure!!!

Our team, LSU Women’s basketball team is headed to the sweet 16. So we are stoked. But I have to be honest this is our team, but there are a few other teams we’re rooting for, I’m trying to keep my bracket alive!!

There are several big games today.

Here is another March Madness game day eat, my Spicy Chicjen Bacon Ranch sliders. A hit with my family.

I made my own spicy ranch with the NEW spicy ranch seasoning from hidden valley ranch. So so good!

BBQ Ribs Sandwich

The McRib sandwich from MCDonalds was a popular sandwich when I was a teenager. For those who may not remember this sandwich was a bbq rib sandwich with pickles and onions. People would go crazy for this sandwich. It could be because it was only for a Limited Time offer.  The sandwich is available each year in November. Every time this sandwich is available people go crazy. I made my own version of the McRib Sandwich. My sandwich is a Twice Pork Rib Sandwich. I used pork Ribs and Bacon in my BBQ Sauce.These Ribs were baked in the oven. I slow-cooked the ribs in the oven.

Chips and dip is one of my favorite snack and game day eat. Chips and dip will be one of the most eaten items at any Super Bowl party.  I’m adding this Spicy Rotel dip to my recipes here. Rotel dip has been around for a long time but I switched things up with these Fiery Spice Garlic Pickles. Spicy and cheesy goodness.

Lasagna Soup

It’s been cold and rainy here in Houston. Saturdays are my day of rest. It’s my day that I intentionally take moments to be still and stop from all of the busyness. It’s something that I’ve done for years and really centers me as we enter a new week. It’s also my day to catch up on my TV shows and watch movies I haven’t watched yet. I hope that your Saturday is comforting, calm and rewarding. 

I love comfort food. This Lasagna soup was comforting, warm and cheesy. I made my first Lasagna soup over a year ago. This soup has since gone viral and there are so many recipes all over the internet.

Oven Baked Ribs

I love bbq ribs. Ribs are one of the things we grill or cook on our smoker. But typically this is done on the weekend. I was craving ribs a few days ago but I didn’t have time to cook any outside so I resorted to the oven to bake my ribs. Simple and easy way to cook fall off the bones ribs. I served the ribs with French fries, side salad and a roll.

I love getting my kids involved when I’m preparing meals or planning my menus. 

I was talking with them about this dish that I wanted to create. My Crispy Chicken bowl is a playoff of the popular KFC Famous chicken bowl. 

My teenager loves spicy chips. She had a bag of funyuns and wanted to make spicy chicken nuggets instead of the regular crispy chicken. I was like cool deal, let’s try it.

Fried Chicken Pasta Boat

A few weeks ago my teen traveled away for a leadership conference with her school. While she was away
she texted me mom please make me a good meal for when I return. I had already planned to do this,but
it was nice hearing from asking me to. Good to know that my kids love my food. But they are spoiled 😂😂 I whipped up this yummy Fried chicken taco bowl topped with spiral Alfredo pasta.

Cajun Collard Green & Cabbage

I have a confession, I’m not much of a vegetable eater? I know, I know, yes I need vegetables. But I have a few that I like. Collard greens are an excellent source of vitamin A, C, and calcium. In addition, rich in vitamin K, and a good source of iron, vitamin B-6, and magnesium. Collard greens are very good for you. This is something that I do eat.

Cabbage is a good source of Vitamin C, high in fiber and Vitamin K.

Collard greens + Cabbage = a very nutritious dish.

Today I’m sharing my Cajunified Collard Greens and cabbage dish.

Very simple and easy to make.
