I love Baked Potatoes. Whether it’s white potatoes or sweet potatoes, it doesn’t matter to me. Baked Potatoes are a lot like tacos they toppings are endless. Speaking of tacos, I created a Carnitas Baked Potato. 

Carnitas Baked Potato

My instant pot Carnitas. Piled on a yummy baked potato.

Ingredients
  

  • 1 3.20 lb Carnitas
  • Extra Fancy Pork Rub
  • 4 - 6 Baking Potatoes
  • Garlic Goodness Olive Oil Generous amount to saute
  • Purple Onions Julienne
  • Cumin Season to taste
  • 4 Lime juiced
  • 1 Qt Organic Chicken Stock
  • 1 Sliced Jalapenos
  • Julienne Orange Bell Peppers
  • Chili Powder Season to taste
  • Oregano Season to taste
  • 1 Palm Full Dry Bay Leaves
  • Onion Powder Season to taste
  • Garlic Powder Season to taste
  • Zest of one Lime
  • 1 Palm Full Fresh Cilantro
  • Shredded Cheese
  • Sliced Tomatoes
  • 1 Cup Water
  • Lime Spears For Garnish
  • Southwest Chipotle Dressing Drizzled on top
  • butter To Taste
  • Sour Cream To Taste

Directions:
  1. Preheat the oven to 400 degrees.
  2. Rinse the potatoes.
  3. Use a fork and pierce holes in the baked potatoes.
  4. Place in a baking pan.
  5. Season with salt on the outside.
  6. Add water.
  7. Cover with foil paper.
  8. Bake the potatoes for an hour.
  9. Season the Carnitas with the Fancy Pork Rub.
  10. Turn the Instant Pot on Saute.
  11. Add a generous amount of the Garlic Goodness to Instant Pot.
  12. Once hot, add the Carnitas. Brown the meat.
  13. Add all of the ingredients Jalapenos, Orange Bell peppers, Lime Juice, Zest of the Lime, Purple Onions, Water, Chicken Stock, Cumin, Onion Powder, Fresh Cilantro, Garlic Powder, Dry Leaves, Oregano, Lime Juice, Chili Powder.
  14. Cover the Instant Pot with the Lid.
  15. Switch Setting to Pressure Cooker on High. Cook for 45 minutes.
  16. Once the timer goes off. Release pressure valve for the Instant Pot. Remove the lid when time.
  17. Meat will be tender. *Optional you can cook on meat setting if you want to remove more liquid.* I didn't it was fine like that for us.
  18. Time to build potato. Cut potato in half or on angle across just the top so it can serve as a bowl. Add butter, Mix, add cheese, pork carnitas with a little juice. Add more cheese if you would like.
  19. Garnish with Cilantro, tomatoes, purple onions, jalapeños, tomatoes, lime.
  20. Drizzle Southwest Chipotle dressing on top.
  21. Enjoy.
