Back to school is in full effect. Make ahead breakfast meals are my go to! I don’t have time to prepare food in the morning, because we are up really early.

I try my best to make a few items ahead for the kids to eat and have as an option.

Prepackaged breakfast meals are often the go to for many families because of time. Which I get it, because of the busyness of many families.

For me, I have found a way around having to feed prepackaged meals to my kids for breakfast. I make the items ahead of time. It’s worked out so well.

It takes some time on Sunday, but it’s so worth it in the end.

As a kid we grew up eating pop-tarts. But I have to be honest, I typically don’t feed this to my kids.

I do love making my own Pop-tarts,  which I do allow my kids to have. I recently created a new one that I tested on my family. My Lemon Blueberry Pop-tarts. Instead of using Puff Pastry for the Poptarts, I used the Wick’s World class Pie crust. Wick’s Pie crust are not just for pies, but for pop-tarts.

Lemon Blueberry Pop-tart 

Ingredients:

  • Wick’s Pie Crust (4)
  • Funfetti Vanilla Llama Love Icing and llama sprinkles (available at Wal-mart)
  • Blueberry Preserves in a can (1 cup)
  • Zest of Lemon (optional)
  • Lemon Extract (1/3 tsp)

Directions:

  1. Remove the Wick’s Pies crust from the freezer.
  2. Preheat the oven to 350 degrees.
  3. Cut the pie crust into the desired rectangle size of the pop-tarts. You need two pieces to make a pop-tart. (I used a Mirr Pastry Wheel Decorator and Cutter. Shop here )
  4. Add the blueberry preserve to a bowl.
  5. Add the Lemon extract to the bowl. Stir.
  6. Once you have cut the pie crust into pieces, add 1 tbsp and 1/2 of filing to the middle of the pie crust.
  7. Seal the pop-tart with the other half. Use your fork end to crimp together. (Optional, some people use an egg wash to seal it and then crimp with the fork). I just used the fork.
  8. Bake at 350 degrees for 18 – 25 minutes or until golden brown. *Note, if you noticed that both the inside and outside is cooked, but you want a more golden brown color on the outside, broil for one minute to brown the outside quicker.*
  9. Remove the pop-tarts from the oven.
  10. Allow to cool for a minute.
  11. Melt some of the icing in the microwave for 12 seconds. Drizzle on top of the Poptarts.
  12. Zest a lemon on top of each Poptart.
  13. Sprinkle the Llama sprinkles on top.
  14. Enjoy.

I guarantee this will be a hit with the kids.
