Mashed Potatoes are typically our go to when we want potatoes. But I decided to switch things up with Sweet Potatoes. Sweet Potatoes are a much healthier options than white potatoes.

I created something I’ve never had before a Southwestern Smashed Sweet Potato Bowl. I have to say it was surprisingly yummy.

Southwestern Smashed Sweet Potatoes

A healthier option to enjoying mashed potatoes but with a sweet potato. Add your favorite ingredients to this yummy Smashed Sweet Potato Bowl. I love Southwestern flavors so this was a no brainer.

Ingredients
  

  • 1 lb Ground Chicken
  • Sargento Whole Milk Mozzarella Generous amount
  • 15 oz Black beans
  • Cumin Season to taste
  • Herdez Guacamole Salsa Generous amount
  • 1 Sweet Potato Cut into pieces
  • 1/2 Red Onion Diced or Julienne
  • Planet Oat OatMilk A few Splashes
  • Lemon spears
  • Sprouts For garnish
  • Briggs True TexArribean Citrus Pepper Seasoning Season generously
  • Slap Ya Mama Season generously
  • 2 tbsp butter
  • 1 can Golden Sweet Corn
  • olive oil
  • cinnamon and sugar Generous amount
  • 1/2 Lemon Squeeze on the ground chicken once done cooking.

Notes

This recipe will be for 2 people. I am the only one in my family who eats Sweet Potatoes. This recipe can easily be converted to regular mashed potatoes.

Ingredients:
  • Ground Chicken
  • Olive Oil
  • Briggs True TexArribean Citrus Pepper
  • Sargento Whole Milk Mozzarella Cheese
  • Black Beans
  • Cumin
  • Herdez Guacamole Salsa

  • Red Onion

  • Golden Sweet Corn

Directions:
  1. Peel the Sweet Potato.
  2. Rinse the Sweet Potato.
  3. Cut the sweet potato in cubes.
  4. Add to pot of water. Boil water and sweet potatoes. Approximately 20 minutes or so.
  5. While potatoes are boiling, Season the Ground chicken with Tex-Arribean Citrus Seasoning.
  6. Julienne cut the purple onion. Set aside.
  7. Add the Black beans to a small pot. Add cumin and stir. Heat the beans completely. Taste. Add a little salt if you would like. I didn't because of all of the other ingredients in the bowl.
  8. Add the can of Sweet Corn to a pot with butter. Season with Slap Ya Mama. Stir and Heat completely.
  9. Add Olive Oil to Skillet, once heated, brown the ground chicken until cook. Approximately 7 - 10 minutes or until cook. Drain and Set aside.
  10. Drain the sweet potatoes once completely tender. Add potatoes back to the pot.
  11. Turn heat to low.
  12. Add butter and cinnamon and sugar. Stirring occasionally until the potatoes are mashed. Add a few splashes of oatmilk. Whip and taste. Smash the potatoes with the back of your fork or whip with a whisk.
  13. Build the bowl: Mashed Sweet Potatoes, Ground Chicken, Corn, Black Beans, red onions, Mozzarella Cheese and garnish with sprouts. Squeeze the lemon on top. Drizzle Guacamole Salsa on top. Delicious.
