Monte Cristo Sandwich

I am not much of a sandwich eater, but there is one sandwich that is my favorite and has been for a very long time, Monte Cristo. Bennigan’s Restaurant had the best Monte Cristo. This is the spot that I first enjoyed a Monte Cristo. Many Many years later this is still one of my favorite sandwiches. The Bennigan’s in Louisiana where I used to live closed before we relocated to Texas.

Last week I was craving a Monte Cristo. There isn’t a Bennigan’s here in Houston, so that meant I needed to create my own if I wanted to eat it.

Crispy Chicken Bowls

I love getting my kids involved when I’m preparing meals or planning my menus. 

I was talking with them about this dish that I wanted to create. My Crispy Chicken bowl is a playoff of the popular KFC Famous chicken bowl. 

My teenager loves spicy chips. She had a bag of funyuns and wanted to make spicy chicken nuggets instead of the regular crispy chicken. I was like cool deal, let’s try it.

Turkey Parmesan Sandwich

Chicken Parmesan is one of my favorite Italian dishes. This is my go to when we dine at Italian Restaurants. I picked up this new sauce by Mezzetta called Truffle, Porcini & Cream which was how this new recipe idea came about for dinner. This sauce is so delicious and was the perfect choice for my Turkey Parmesan Sandwich.

I replaced the chicken with Turkey breast instead of the chicken breast. A great choice. So delicious.

In addition to this new sauce, Smoked mozzarella was superb on this sandwich.

Cajun Collard Green & Cabbage

I have a confession, I’m not much of a vegetable eater? I know, I know, yes I need vegetables. But I have a few that I like. Collard greens are an excellent source of vitamin A, C, and calcium. In addition, rich in vitamin K, and a good source of iron, vitamin B-6, and magnesium. Collard greens are very good for you. This is something that I do eat.

Cabbage is a good source of Vitamin C, high in fiber and Vitamin K.

Collard greens + Cabbage = a very nutritious dish.

Today I’m sharing my Cajunified Collard Greens and cabbage dish.

Very simple and easy to make.
