Our week days can be very busy. I’m often looking for ways to feed my crew quickly. Not to mention in an inexpensive way. Eating fast food isn’t healthy and can be very costly. I love to dine out but I want to spend our money on dining out not just picking up food to go. Creating this recipe was fun. So simple. This taco recipe is so easy and very good
Ingredients:
- avocado (diced)
- Southwestern tortilla (HEB)
- Chipotle baja sauce
- Dried cilantro
- Bag of crispy fish strips (Bowers Homegrown Catfish)
- Mango pico de gallo
- Cabbage slaw or salad blend (you can use items in salad kit, I used a different sauce)
- Mexican rice (optional side dish)
Directions:
- Air fry the fish according to packaging. Pro tip, add a few extra minutes of cooking time for crispier skin.
- Heat the tortilla on both sides 1-2 minutes total.
- Build taco, southwestern tortilla, cabbage slaw, crispy fish, drizzle Chipotle aioli, mango pico de gallo, cilantro and avocado. Superb.
