Now that September is here it’s just a matter of time before Fall weather is here. I have been thinking of new Fall dishes.

This Tuscan Chicken is one that I think is really easy but also versatile. Meaning that you can add different ingredients to switch it up. Plus it is a one pot meal!

Can’t get any better than that!

Hearty Tuscan Chicken

Comfort in a bowl. A nice hearty dish that can satisfy the hunger of your family and is packed with good flavor.

Ingredients
  

  • Boneless Chicken Thighs
  • 2 Great Northern Beans
  • Basil
  • 1 Bag Spinach
  • Diced Canned Tomatoes
  • garlic
  • Dry Rosemary
  • Fresh Thyme
  • Dry Marjoram
  • Dry Fennel Seeds
  • Garlic Powder
  • Diced Onion
  • Diced Bell Peppers
  • Slap Ya Mama Seasoning
  • Diced celery stalk
  • olive oil
  • Chicken Stock
  • Dry Parsley

Hearty Tuscan Chicken

Ingredients:
  • Boneless Chicken thighs
  • Canned Great Northern Beans
  • Fresh Basil
  • Spinach
  • Canned Diced tomatoes
  • Diced Garlic
  • Celery
  • Spices
    • Basil
    • Rosemary
    • Thyme
    • Marjoram
    • Fennel seeds
  • Garlic powder
  • Slap Ya Mama
  • Olive Oil
  • Chicken Stock
  • Smoked Paprika
  • Parsley
Directions
  1. Season chicken with slap ya mama.
  2. Add Olive Oil to a pot. Heat.
  3. Brown chicken on both sides. Don't cook completely. Only enough to brown. It will finish cooking once returned to the pot. Remove and set aside temporarily.
  4. Sauté onions bell peppers, garlic and celery.
  5. Sauté spinach.
  6. Add chicken stock.  Lightly simmer.
  7. Add all of the spices. Stir.
  8. Drain white beans, then add white beans to the pot.
  9. Add diced tomatoes.
  10. Stir and bring to a boil.
  11. Turn down the heat. Then add the chicken thighs. Stir. Cook on low for about 20 - 30 minutes or until the chicken and beans are tender.
  12. Add parsley. Stir.
  13. Taste and check if additional seasoning is needed.
  14. Serve.
Serve over rice or with a crostini style bread with fresh Parmesan cheese that is melted.
