I had a chance to create a few recipes. Today I am sharing my Chocolate Pancake Sandwich. This is not your normal Breakfast Sandwich. If you love Chocolate, this breakfast Sandwich is for you.

Chocolate Pancake Sandwich

Pancakes are a popular breakfast item. Here is my Chocolate Mini-pancake Sandwich.

Ingredients
  

  • 8 Strips of Bacon Cut bacon in half before broiling
  • Russell Stover Sugar Free Semi-Sweet Baking Chips
  • 3 - 4 Bananas Sliced
  • Melted Chocolate (semi-sweet chips and milk mixed together) Chocolate baking chips, mix over a hot pot
  • Krusteaz Buttermilk Pancake Mix Mix As recommended
  • Whoopie Pie Pan link attached
  • Non-Stick Spray
  • Lactaid Milk As needed

Directions:
  1. Preheat the oven to 375 degrees.
  2. Cut the uncooked bacon strips in half. Spray a small pan with non-stick spray. Add to the pan, broil bacon at 500 degrees for 8 - 9 minutes in a convection oven.
  3. Drain the bacon on a paper towel. Set aside.
  4. Add 2 cups of Pancake mix, 1 1/3 cup of water. Mix together and set aside.
  5. Add 1/2 cup of Russell Stover Sugar Free Baking Chips.  Stir.
  6. Spray Whoopie pan with non-stick spray.
  7. Add Pancake mixture to the whoopie pan. Almost full.
  8. Bake for 10 minutes in the oven.
  9. Boil a pot with hot water. Once the water is boiling, add Russell Stover Sugar free baking chips to a clear bowl. Adding milk a little at a time and stirring often to melt the chocolate.
  10. Cut the bacon strips in half.
  11. Dip bacon in chocolate and set aside.
  12. Cut the banana into 2 pieces then cut in half.
  13. Once the pancake (whoopie pie) mini-pancakes are done. Allow to cool for a few minutes. Dip the top in the melted chocolate. Only the tops of the sandwich should be dipped. Set aside.
  14. Now time to build the sandwich. Pancake bottom, banana, chocolate dipped bacon top with either than chocolate dip pancake top or plain pancake toppers.
  15. As you can see, I have two types of sandwiches. The other one is basically just the mini-pancakes, banana, and chocolate dipped bacon strips. For those who may not like a lot of chocolate.
