Growing up in Louisiana my family would prepare White beans every Wednesday. This created the white beans Wednesday. My husband grew up the same way and he is always happy when I make this dish for him. I’m not raising my kids that way, but we do love White beans occasionally. One of meat that we love in our White beans is pork tails. I know everyone won’t appreciate this delicious delicacy. But don’t knock it till you try it. 😂😂😋😋

White beans 

Ingredients:

  • Bag of beans 
  • 1 big chicken stock 
  • 8 cups of water
  • Diced onions and bell peppers 2 tbsp 
  • Slap ya mama seasoning to taste 
  • Onion powder, garlic powder and smoked paprika 1 tbsp 
  • 2 pack of pork tails season with slap ya mama  (optional, you can also use smoked meat or sausage) 
  • Salt (season to taste)
  • Hot sauce (optional)

 

Directions:

  1. Rinse your beans.
  2. Toss in the pot.
  3. Add the chicken stock.
  4. Add the water.
  5. Add the onions and bell peppers.
  6. Season the pig tails.
  7. Add the pig tails in the pot.
  8. Add in the onion powder, garlic powder and smoked paprika.
  9. Cook on medium to high heat for 3 hours 50 minutes adding water occasionally.
  10. Stir occasionally.
  11. Taste.
  12. Add additional Slap ya mama and Salt if necessary.
  13. Serve over rice.
  14. Don’t forget the hot sauce.
  15. Enjoy.
