We are in the season of busy. Both of my kids are currently in their Fall Sports which means a change in our schedules. One thing I work hard to do is making sure we have home cooked meals nightly. It requires planning on my part to make sure this happens. I had the opportunity to work with a new brand called “Afia”. Afia is company that creates Mediterranean Spices. The spices are all non-gmo, no preservatives.
The spices are available in 3 spice blends, Shawarma, Za’atar and Baharat 7 spice. Today’s recipe is my Chicken Shawarma meal with the Shawarma seasoning.
Chicken Shawarma Skewers
Ingredients:
- 2 – 3 chicken breast cut into bite size pieces
- Wooden skewers (shop here )
- Shawarma seasoning (shop the spice here )
- Garza Olive oil (shop these oil here) or olive oil of choice
Items for the Mediterranean dish:
- 3 cucumbers (thinly sliced)
- Cherry tomatoes (halved)
- Pickled purple onions (Cleveland Kitchen)
- HEB Garlic and herb fries (Air fried)
- Spicy hummus
- Stone Fire naan dippers (heated)
- Parsley (garnish)
- Tzatziki
- Mediterranean feta cheese
Directions:
- Slice the cucumbers. Set aside.
- Cut the tomatoes. Set aside.
- Add the pickled onions, tomatoes and cucumbers and parsley to a bowl and mix.
- Cut the chicken breast into bite size pieces
- Season the chicken with the shawarma seasoning.
- Add the chicken to the skewers. 5-7 pieces per skewer.
- Grill the chicken on the outdoor grill at 400 degrees. 8-10 minutes per side. Flip a few times during the cooking process.
- Air fryer the garlic and herbs fries according to the package.
- Warm the mini pita bread.
- Build the dish, cucumber and tomato salad, hummus, top with feta cheese, add naan bread dippers, add in the garlic fries, add the tzatziki sauce and add the chicken skewers.
- Enjoy this delicious meal. Simple, quick and easy. Less than 30 minutes to make.
