Salmon & Rainbow Chard

Light and Refreshing Dish.

Ingredients
  

  • 1 Salmon Steaks
  • 1 bundle Rainbow Chard Chopped
  • 2 pinches Salt
  • Seasoning
  • olive oil
  • Land O'Lakes Butter
  • 1/2 Lemon
  • 1 hand-full Flat Italian Parsley Chopped

Last week I was feeling a little sluggish.  I figured my iron was a little low so I decided to add some greens to my diet and Salmon.  Instead of ordering or going out to eat for lunch, I whipped up a quick meal.
This meal didn't take long at all.  Simple and easy.  Using only a few simple ingredients.

Ingredients:
  • Rainbow Swiss Chard
  • Salmon Steak
  • Land O'Lakes Butter
  • Seasoning
  • Lemon
  • Olive Oil
  • Italian Parsley

Directions: 
  1. Remove the Skin of the Salmon. You can choose to do it after the Salmon is cooked. Easier but I used a knife to remove the skin prior to cooking.
  2. Season with your seasoning of choice.  I use a blend of spices. Set aside.
  3. Cut the Swiss Chard. I used all of it. Waste not, want not.
  4. Preheat the oven to 425 degrees.
  5. Add olive oil to a skillet.  Saute the Swiss Chard for about 3 - 5 minutes.  Season with a little salt.
  6. Remove from heat.
  7. Drizzle a little more olive oil on the Swiss Chard.
  8. Top the Swiss Chard with the Salmon.
  9. Slice a few pieces of butter on top.
  10. Bake at 425 degrees for 15 - 20 minutes or until the Salmon is cooked.
  11. Remove from the oven.
  12. Finish with a little fresh lemon juice and chopped Italian Parsley.
  13. Serve. Enjoy.
