Mashed Potatoes are typically our go to when we want potatoes. But I decided to switch things up with Sweet Potatoes. Sweet Potatoes are a much healthier options than white potatoes.
I created something I’ve never had before a Southwestern Smashed Sweet Potato Bowl. I have to say it was surprisingly yummy.
Southwestern Smashed Sweet Potatoes
A healthier option to enjoying mashed potatoes but with a sweet potato. Add your favorite ingredients to this yummy Smashed Sweet Potato Bowl. I love Southwestern flavors so this was a no brainer.
Ingredients
- 1 lb Ground Chicken
- Sargento Whole Milk Mozzarella Generous amount
- 15 oz Black beans
- Cumin Season to taste
- Herdez Guacamole Salsa Generous amount
- 1 Sweet Potato Cut into pieces
- 1/2 Red Onion Diced or Julienne
- Planet Oat OatMilk A few Splashes
- Lemon spears
- Sprouts For garnish
- Briggs True TexArribean Citrus Pepper Seasoning Season generously
- Slap Ya Mama Season generously
- 2 tbsp butter
- 1 can Golden Sweet Corn
- olive oil
- cinnamon and sugar Generous amount
- 1/2 Lemon Squeeze on the ground chicken once done cooking.
Notes
This recipe will be for 2 people. I am the only one in my family who eats Sweet Potatoes. This recipe can easily be converted to regular mashed potatoes.
Ingredients:
- Ground Chicken
- Olive Oil
- Briggs True TexArribean Citrus Pepper
- Sargento Whole Milk Mozzarella Cheese
- Black Beans
- Cumin
- Herdez Guacamole Salsa
- Sweet Potato
- Red Onion
- Planet Oat OatMilk
- Lemon Spears
- Sprouts
- Slap Ya Mama Seasoning
- Butter
- Golden Sweet Corn
- Olive Oil
- Peel the Sweet Potato.
- Rinse the Sweet Potato.
- Cut the sweet potato in cubes.
- Add to pot of water. Boil water and sweet potatoes. Approximately 20 minutes or so.
- While potatoes are boiling, Season the Ground chicken with Tex-Arribean Citrus Seasoning.
- Julienne cut the purple onion. Set aside.
- Add the Black beans to a small pot. Add cumin and stir. Heat the beans completely. Taste. Add a little salt if you would like. I didn't because of all of the other ingredients in the bowl.
- Add the can of Sweet Corn to a pot with butter. Season with Slap Ya Mama. Stir and Heat completely.
- Add Olive Oil to Skillet, once heated, brown the ground chicken until cook. Approximately 7 - 10 minutes or until cook. Drain and Set aside.
- Drain the sweet potatoes once completely tender. Add potatoes back to the pot.
- Turn heat to low.
- Add butter and cinnamon and sugar. Stirring occasionally until the potatoes are mashed. Add a few splashes of oatmilk. Whip and taste. Smash the potatoes with the back of your fork or whip with a whisk.
- Build the bowl: Mashed Sweet Potatoes, Ground Chicken, Corn, Black Beans, red onions, Mozzarella Cheese and garnish with sprouts. Squeeze the lemon on top. Drizzle Guacamole Salsa on top. Delicious.
