Lasagna soup 

Saturdays are my day of rest. It’s my day that I intentionally take moments to be still and stop from all of the busyness. It’s something that I’ve done for years and really centers me as we enter a new week. It’s also my day to catch up on my TV shows and watch movies I haven’t watched yet. I hope that your Saturday is comforting, relaxing, calm and rewarding. 

I love comfort food. This Lasagna soup was comforting, warm and cheesy. I made my first Lasagna soup over a year ago. This soup has been created by many other and has gone viral and there are so many recipes all over the internet.When I created it the first time, I cooked the soup completely different. It’s been cold and rainy here in Houston so this is a perfect dish for rainy or cold days.

Ingredients:

  • Lasagna noodles (1lb) cut into pieces once boiled 
  • Marinara sauce (24.3 oz x 2)
  • Low sodium Slap Ya Mama (season to taste)
  • Smoked paprika (Season to taste)
  • Garlic powder (Season to taste)
  • Onion powder (Season to taste)
  • Garlic powder (Season to taste)
  • Italian seasoning (Season to taste)
  • Ground beef (1-2 lbs depending on how meaty you want it)
  • Shredded Mozzarella cheese (4 oz)
  • Shredded Monterey Jack Cheese  (or use your cheese of choice) 4 oz
  • Beef broth 
  • Fresh basil 1 palm full (chopped) 
  • Fresh parsley for garnish 
  • Olive oil 2 tbsp 
  • Diced onions and bell peppers (1 tbsp) 
  • Fresh Parmesan for garnish to shave on top 

Directions:

  1. Add water with a little salt and 1 tbsp olive to a pot to boil the Lasagna noodles.
  2. Add 1 tbsp of olive oil to pot to brown the ground beef.
  3. Add the ground beef. 
  4. Season with the slap ya mama, smoked paprika and onion and garlic powder. Brown the ground beef. Stirring often. Cook until the meat is brown. 8 -10 minutes or so
  5. Add in the diced onions and bell peppers. Stirring often. 2 – 3 minutes. 
  6. Drain the ground beef. Add back to the pot.
  7. Add the noodles to the boiling water. Cook according to the packaging. 
  8. Add the marinara sauce to the ground beef. Stir.
  9. Add more of the seasoning above (optional). Taste. Cook for about 6 minutes or until bubbling.
  10. Add in the beef broth. Stir.
  11. Add the Italian seasoning. About 2 – 3 tbsp. Taste.
  12. Add in the Fresh basil. 
  13. Once the noodles are boiled, drain. Cut noodles into 3 pieces. 
  14. Add to the soup. Don’t allow to stick. Gently stir. 
  15. Add in a heaping of shredded cheese. 
  16. Once the cheese is melted. 1 minute or so. 
  17. Add to a bowl. Shave fresh Parmesan on top.
  18. Garnish with parsley.
  19. Enjoy.
