It’s Wellness Wednesday. I’ve been working to come up with NEW, Healthy Recipes for my family. My husband and I are trying to be intentional about eating healthier. Now I have to be honest, I am typically not a salad person. But there are a few salads that I really love to make.

I have recently created a new one that I absolutely love, my Spicy Dumpling Salad. This salad was superb. There are only a few simple ingredients, but it is sooooo good!!

My son and I had this for lunch one day and he loved it!

Spicy Dumpling Salad

Ingredients:

  • Spicy Dumplings (Bibigo Mandu Spicy Pork and Vegetable Dumplings, Target)
  • Green onions – thinly sliced
  • Cilantro – Chopped
  • Sesame seeds – garnish
  • Asian sesame salad dressing
  • Chopped salad in the bag (Green leaf lettuce, broccoli stalk, red and savory cabbage, carrots) Set aside the dressing and garnishes in the bag salad for another time.
  • Crispy chow mein noodles or wonton strips – garnish

Directions:

  1. Add Olive oil to the skillet. Heat.
  2. Pan fry the dumplings according to the package.
  3. Prep the cilantro, green onions and jalapeños. Set aside.
  4. Pour in some of the salad dressing.
  5. Add in the chopped salad.
  6. Top with the hot dumplings.
  7. Add in the green onions, jalapeños and cilantro.
  8. Add in the chow mein noodles.
  9. Add in a little more salad dressing.
  10. Garnish with the Sesame seeds.
  11. Add the lid. Shake, shake. Shop the meal prep salad bowls here
