A popular game day delight is Buffalo chicken wings. Typically fried wings served with french fries, celery and carrots. Well I decided to switch up our normal game day buffalo chicken wings meal with a healthier version, my Buffalo Chicken salad. This salad was one of my favorite salads that I have prepared in a long time. So easy and the perfect week day meal that can be prepped ahead of time with the exception of the chicken. This salad was tasty, filled with lots of textures and delicious well-balanced flavors. So good. A healthy meal for any day of the week!

Buffalo Chicken Salad 

Ingredients:

  • Blazing Buffalo Chicken Breast (1/2 lb – 1 lb slices) – cut into pieces for the salad
  • Tyson Anytizers bag of Buffalo style Chicken Breast (air fryer. shop air fryers here )
  • Romaine lettuce (chopped, desired amount)
  • Shredded carrots (desired amount)
  • Pepperoncini (sliced)
  • Cherry tomatoes (halved)
  • Shredded cheese blend (desired amount)
  • Celery stalks (sliced)
  • Blue cheese crumbles (desired amount)
  • Ranch dressing (desired amount)
  • Eggs (diced, desired amount)
  • Bacon (chopped)
  • Cheese & Garlic Croutons (desired amount)
  • Creamy buffalo sauce (optional, adds another level of spice)

Directions:

  1. Boil the eggs. Peel and dice the eggs. Set aside.
  2. Cook your bacon. Chop into pieces. Set aside.
  3. Prep the lettuce, tomatoes, celery, carrots and set aside.
  4. Air fry Buffalo Chicken. Add a few additional minutes for crispier chicken.
  5. Build your salad:
    1. Lettuce
    2. Buffalo chicken breast
    3. Bacon
    4. Shredded cheese
    5. Shredded cabbage
    6. Celery
    7. Tomatoes
    8. Pepperoncini
    9. Blue cheese
    10. Eggs
    11. Croutons
    12. Buffalo chicken bites
    13. Drizzle the creamy buffalo sauce across the top of the buffalo chicken bites.
    14. Place the ranch dressing in the salad bowl.
    15. Enjoy.
