Kickstarting my week with a NEW Salad recipe. This Cajun Salmon Salad was so good. Fun fact about me, I don’t love salads. But I have found ways to prepare salads that have become some of my favorites. Now I love toppings. Having different textures in my salads make for a more enjoyable salad. This Salmon pasta salad was a hit even with my kids. I usually don’t use arugula because it’s not a salad we use. But arugula paired perfectly with this dish.

Cajun Salmon Salad

Ingredients:

  • Salmon steaks
  • Blackening seasoning – season to taste
  • Fresh dill for garnish
  • Purple onions – julienne cut
  • Arugula lettuce
  • Feta cheese
  • Capers
  • Crispy tortilla strips
  • Orecchiette Rigate pasta
  • Lemon herb vinaigrette dressing

Directions:

  1. Season the salmon steaks with blackening seasoning. Set aside.
  2. Add a pot of water to the stove. Once boiling, prepare the pasta according to the packaging. Drain pasta and set aside.
  3. While the pasta is boiling, air fry the salmon. I prepared our salmon at 350 on the air fryer setting for 6 – 8 minutes or until the salmon reaches medium temperature.
  4. Start preparing the salad:
    1. Take the arugula salad, toss with some of the lemon and herb viniagrette. *Will take out the bitterness out of the lettuce.* Place the lettuce on a plate.
    2. Place the desired amount of pasta to the plate.
    3. Add in the purple onions.
    4. Add in the capers.
    5. Add in the feta cheese.
    6. Add in the tortilla strips.
    7. Add in the pasta.
    8. Place the salmon on top.
    9. Finish with fresh dill.
    10. Add a little more of the dressing on top.
    11. Enjoy.
