Eggs and Spinach with Tomato Basil Cheese
A colorful breakfast that is good for you.
Ingredients
- 1 tbsp olive oil
- 2 brown eggs scrambled
- Tomato Basil Feta cheese
- 1/2 bag Spinach
- Pam Olive Oil Spray
- Seasoning Season to taste

Simple dishes are my thing lately. I am moving a 100 miles per minute every day. Especially in the morning times. Which makes it challenging to make sure that I am eating a healthy breakfast.
Most mornings my go to is Smoothies. Either ones I create at home or one from my favorite spots here in Houston. They know me when they see me, because I go to the same spots often.
I was hungry for scrambled eggs one morning, so I decided to spice up my eggs a little. My Eggs and Spinach with Tomato Basil scrambler. Super easy.
Ingredients:
- Brown eggs
- Spinach
- Slap Ya Mama
- Tomato Basil Feta Cheese
- Pam Olive
- Olive Oil
- Scramble 2 eggs in a bowl. Season with Slap ya mama. (Not a lot). Set aside.
- Add a little olive to a skillet. Saute the spinach until wilted. Set aside.
- Clean skillet. Spray with Pam. Add Scrambled eggs. Gently scramble.
- Mix in some of the spinach.
- Add Feta cheese.
- Serve.
