I am using Black Rice in a dish today with Blackened Catfish. A little Caribbean flare in this dish.

Blackened Catfish with Black Rice

Black Rice is the most nutritious rice, high in protein, lowest in calories than most rice and low carb.

  • 2 cups Black Rice Prepare rice according to the package
  • 1 Fresh Pineapple
  • 1/2 Red Bell Pepper Diced
  • 2 Big Lime (Juice) Juiced
  • 1 Lemon Juiced
  • Kosher salt Season to taste
  • 1/2 Fresh Jalapeños Sliced
  • Mint For Garnish
  • 1 Cucumber Peeled and diced
  • 1/4 Purple onion Diced
  • 3 Catfish
  • Slap Ya Mama Season to taste
  • Cumin Season to taste
  • Garlic Powder Season to taste
  • Onion Powder Season to taste
  • Smoked Paprika Season to taste
  • Sriracha Ranch Dressing Optional
  • Fresh Cilantro For Garnish
  • Kosher salt Season to taste

  1. Prepare the black rice according the package.
  2. Season the Catfish with Cumin, Slap Ya Mama, Smoked Paprika, Garlic Powder and Onion Powder. Set aside.
  3. Prepare the pineapple to be cut. Cut the pineapple into chunks.
  4. Peel cucumber and dice. Set aside.
  5. Slice the jalapeño. Set aside.
  6. Dice the red bell pepper. Set aside.
  7. Half the lemons and limes. Juice the fruit. Set aside.
  8. Dice the purple onion. Set aside.
  9. Remove 2 cups of the black rice from the rice pot to cool.
  10. Add the pineapples, cucumbers, red bell peppers and purple onions in a bowl. Mix together.
  11. Cook the catfish under the broiler (500 degrees) for 12 - 15 minutes. Cooking times may vary.
  12. Once the rice is cooled. Add the juice of the limes and lemon to the rice. Stir together.
  13. Add the fruit pineapple mixture to the rice.
  14. Add Kosher Salt. Stir well.
  15. Add jalapeños and mint for garnish.
  16. Black Rice Salsa is perfect with seafood.
  17. Serve the black rice at the bottom and top with the Blackened Catfish. Drizzle with Sriracha Ranch and garnished with fresh cilantro.
