For Thanksgiving, Rice Dressing or Cornbread dressing is always on the table. We love dressing. Substitute your dressing with this easy Eggplant Dressing. The dressing is flavorful and delicious.
A great way to incorporate vegetables in a dish and your kids won’t even notice. My kids didn’t know at all.
Eggplant is a great source of vitamins and minerals.
Ingredients:
- Large Eggplant (1)(diced into small pieces, cuts the cooking time)
- Ground Beef 80/20 (3lb)
- Cooked Rice (Desired amount)
- Slap Ya Mama Seasoning (Season to taste)
- Chicken Stock (1/2 cup or so)
- Smoked Paprika (Season to taste)
- Garlic Powder (Season to taste)
- White onion (diced)
- Orange Bell Peppers (diced)
Directions:
- Add the ground beef to a skillet. Brown the meat.
- Add in the onions and bell peppers. Stirring often.
- Once the onions are translucent. Remove the meat mixture and drain the ground beef.
- Add the eggplant to the same skillet. Saute. Stirring often. 5 – 8 minutes or until soft.
- Season with slap ya mama, smoked paprika and garlic powder. Stir.
- Add the ground beef back to the skillet.
- Add in the chicken stock. Cook for about 5 minutes or until some of liquid is dissolved.
- Mix in the desired amount of rice. Stir and mix well.
- Taste. Add in more seasoning if necessary.
- Serve. The amount I prepared was enough to feed my family of 4 and they ate twice. Double or triple based on the amount of people.
- Enjoy.
