Salt and Vinegar Chips are one of my favorite chips. During my last trip to the grocery store, I picked up a bag. Well I had the bright idea to use the salt and vinegar chips like a panko to fry my shrimp. Yeah that’s what I said, Salt and Vinegar Shrimp.
It’s Fry-Day so we decided to Fry up some shrimp. These poboys were delicious. A twist on our classic shrimp poboys which is very popular back home at this time of year, because it’s Lent Season.
I also used a new product for my aioli for the poboy, this Spicy Hidden Valley Ranch Seasoning. Go get you some. This stuff is good. Easy to make, added a nice level of spice to the poboy.
Salt and Vinegar Shrimp
Ingredients:
- Salt and Vinegar Chips grind in coffee grinder (shop here )
- Hidden Valley Spicy Ranch Seasoning (Make an aioli with this according to package, mayo, ranch seasoning and olive oil)
- Pepperidge farm Sausage buns
- Shrimp (1 1/2 lbs, Peeled and deveined)
- Slap Ya Mama low sodium seasoning
- Garlic Powder
- Smoked Paprika
- Flour (1 – 2 cups for batter)
- Eggs (beaten, 2)
- Frying Oil
- Mixed greens
- Parsley flakes (chopped, fresh)
- Suckerpunch Fiery Spice Garlic Dill (optional)
Directions:
- Make your aioli with the spicy ranch seasoning, mayo and olive oil. Follow the instructions on the ranch seasoning. Add additional olive oil in order to drizzle. Refrigerate.
- Use a coffee grinder or grinder of some sort to grind the Salt and Vinegar chips.(similar to a panko breading) Set aside.
- Heat your frying oil in the frying pot. 350 degrees.
- Season the shrimp with Low Sodium Slap ya Mama seasoning, Smoked Paprika and Garlic Powder.
- Beat your eggs.
- Add the flour to a pan.
- Now the dipping process for the shrimp: Flour, eggs, salt and vinegar crumbs.
- Place the shrimp into the basket.
- Drop into the grease. Fry at 350 degrees for 3 – 4 minutes or until golden brown.
- Remove from the fryer.
- Toast the sausage buns, add some of the aioli on the bun, add the mixed greens, top with shrimp, drizzle the spicy ranch on top. Finish with parsley.
- Enjoy.
