Happy Monday! Kickstart your week with this new recipe on the blog, “Chicken Caprese”.

This is an easy, healthy recipe. I used Chicken thighs instead of chicken breast in this recipe. This recipe consist of a few simple recipe ingredients.

I picked up a new product to try, Kumato tomatoes. Kumato tomatoes are a simple, unique brown tomato.

 

Chicken Caprese

Ingredients:

  • Kumato Tomatoes (sliced)
  • Balsamic Vinegar (generous amount)
  • Fresh Basil (for garnish)
  • Fresh Mozzarella (sliced)
  • Chicken thighs (six)
  • Slap ya mama seasoning (desired amount)
  • Smoked paprika (desired amount)
  • Garlic Powder (desired amount)
  • Salt and pepper (optional)

 

Directions:

  1. Season the chicken thighs with slap ya mama, garlic powder and smoked paprika.
  2. Add to the chicken thighs to the air fryer.
  3. Set the air fryer to the air fryer setting match cook, and set it to 350 degrees for 12-14 minutes.
  4. While the chicken is cooking, slice the kumato tomatoes.
  5. Slice the mozzarella cheese.
  6. Layer the tomatoes and cheese on one side of the plate.
  7. Season with salt and pepper.
  8. Add the chicken thigh.
  9. Drizzle with balsamic vinegar.
  10. Garnish with fresh basil.
  11. Enjoy.
