Hey guys!! It’s been a minute since I’ve posted a recipe or blog post. I had to move my website to a new host site due to repeated outages. But I am back!! I have lots of NEW recipes ahead as well as cool family updates and fun!

As the new year is here, we are working to be more mindful in our meal preps. This is a new healthy recipe, Salmon bites Mediterranean bowl. The Salmon was seasoned with the Afia Z’atar seasoning which is a “Savor the rich flavors of the Mediterranean with Afia’s blend for Za’atar, a staple in the Levant that combines crunchy sesame seeds and the tang of sumac with earthy herbs, creating a harmonious symphony for your taste buds. Set out dishes of za’atar and olive oil with your bread for a delish snack, or add to dips, sauces and marinades”.

Air Fryer Salmon Bites 

Ingredients:

  • Afia Za’atar seasoning (shop here  )
  • Quinoa (Boil in a bag)
  • Cucumbers (sliced)
  • Tzatziki sauce
  • Mediterranean/Greek salad dressing
  • Chickpeas (air-fried)
  • Sautéed Spinach ( 1 bag of spinach)
  • All Seasoning (optional)
  • Old bay seasoning (optional)
  • Sun-dried tomatoes
  • 4 Salmon pieces (cut into bite size pieces)
  • Sriracha hummus
  • Mediterranean herb feta cheese
  • Greens for garnish
  • Parmesan Garlic Pita Chips

Directions:

  1. Cut the salmon pieces into a half long-ways, then into bite size pieces.
  2. Season the salmon bites with the Za’atar seasoning.
  3. Air fry the salmon bites at 350 degrees 8 -10 minutes or until at internal temperature at 120 – 130 degrees.
  4. Drain the chickpeas.
  5. Add the chickpeas to the air fryer on the air fryer setting. 400 degrees 5-10 minutes or until it’s your desired crispiness. Shaking occasionally.
  6. Prepare the Boil in a bag quinoa according to the packaging. Optional (season with old bay seasoning and lemon after cooked).
  7. Saute spinach with olive oil. Season with all seasoning. Set aside.
  8. Remove the sun-dried tomatoes from jar. Chop into smaller pieces.
  9. Build the bowl: Quinoa, Chickpeas, Tzatziki with cucumbers, Sun-dried tomatoes, spinach, spicy hummus, feta cheese, pita chips, greek dressing, top with salmon bites and finished with greens.
  10. Enjoy this healthy bowl.
