I love Salads. Creating my own is one of the only ways I eat Salads. Simply because so many restaurants don’t know how to build a salad that is filling. Yes the salad may be gorgeous but will it be filling based on the amount of ingredients.

I recently ordered a Southwest Chicken Salad from Room Service while staying at a hotel. What a disappointment? I was so disappointed. The salad lacked appeal and had more lettuce and very little toppings. A big no no.

So I am creating my Kickin’ Chicken Caesar Salad.

Directions:

  1. Cut the bottom ends of the Romaine Lettuce.

  10. Cut lemon into wedges.
  11. Once the chicken is done. Slice long ways and set aside. Make sure it is cooked all the way through. Set aside.
