March Madness is here and it has been MADNESS! Omg! Nail biting games, major upsets and just good games. Whether you are watching NCAA Men or Women’s basketball March Madness has been entertaining for sure!!!
Our team, LSU Women’s basketball team is headed to the sweet 16. So we are stoked. But I have to be honest this is our team, but there are a few other teams we’re rooting for, I’m trying to keep my bracket alive!!
There are several big games today.
Here is another March Madness game day eat, my Spicy Chicken Bacon Ranch sliders. A hit with my family.
I made my own spicy ranch with the NEW spicy ranch seasoning from Hidden Valley Ranch. So so good!
Ingredients:
- Slider buns King’s Hawaiian rolls
- Chicken thighs (boneless and skinless)
- Slap ya Mama seasoning (season to taste)
- Smoked paprika (season to taste)
- Garlic Powder (season to taste)
- Boiled chicken
- Bacon (cooked and chopped bite size)
- Hidden Valley Spicy ranch mix (make according to packaging)
- Cheddar cheese slices (cut into 4 square pieces)
- Butter (1 – 2 tbsp) melted
- Fresh Parsley (generous amount about 2 tsp)
- Water (2 cups)
Directions:
- Season the boneless chicken thighs with slap ya mama, smoked paprika and garlic powder. Set aside.
- Prepare the spicy ranch dressing with the Hidden valley seasoning. Follow packaging. Cover and refrigerate.
- Place the chicken in the instant pot.
- Add in the water (2 cups).
- Seal the instant pot.
- Cook on poultry setting for 30 minutes.
- Add the bacon to a pan, broil in a convection oven at 500 degrees for 10 – 12 minutes or until crispy.
- Place on a paper towel to drain the excess grease. Set aside.
- Add the butter to a small bowl, melt in the microwave. Set aside.
- Add in the parsley to the butter. Stir. Set aside.
- Chop or cut the bacon into bite size pieces. Set aside.
- Preheat the oven to 350 degrees.
- Remove the chicken from the instant pot and add 2 or 3 thighs to the kitchen aid mixer. Yes that’s what I said! Use the mixer and shred your chicken.
- Once the chicken is shredded, add in a generous amount of the ranch dressing to the chicken. Stir.
- Add in the bacon. Stir gently. Make sure everything is mixed well.
- Add the slider buns to a pan.
- Separate the top buns.
- Add some of the spicy ranch dressing to the bottom bun.
- Top the bun with chicken and bacon mixture.
- Cut the cheese into 4. Top with the cheese slices. *Add more cheese if you’d like. My kids wanted more cheese*.
- Add the top buns.
- Brush the buns with butter and parsley mixture.
- Bake at 350 degrees for 3 – 5 minutes or until the cheese is melted.
- Remove from the oven.
- Serve with chips and a ice cold Sprite or your drink of choice.
