Mondays are often the days we eat a beautiful, gorgeous, colorful salad to detox from our weekend indulgences.

I love creating salads. One of the things I consider when I create a salad is colors. So today I am sharing my Shrimp and Vegetables salad.

Shrimp & Vegetables Salad

Creating salads are one of the things I love to do. This Shrimp and Vegetables Salad was a hit in our house.

Ingredients
  

  • Pam Olive Oil Spray
  • Shrimp
  • Eggs
  • Cucumbers
  • Red Bell Peppers Cut long ways, Julienne cut
  • Wacky Mac Noodles
  • Orange and Yellow tomatoes Rinsed and cut in half
  • Eggs Boiled and Cut into 4
  • Broccoli Florets Gently Boiled
  • Lettuce Romaine or Mixed Greens
  • Shredded Cheese
  • Bacon Ranch
  • Seasoning
  • Onion Powder
  • Garlic Powder
  • Smoked Paprika
  • Banana peppers

Grilled Shrimp & Vegetables Salad

Ingredients:
  • Bacon Ranch Dressing
  • Pam Olive Oil Spray
  • Seasoning Spice of choice
  • Garlic Powder
  • Onion Powder
  • Smoked Paprika
  • Banana peppers
  • Lettuce
  • Wacky Mac Noodles
  • Tomatoes
  • Red Bell Pepper
  • Cucumbers
  • Broccoli Florets
  • Eggs
  • Shredded Cheese
  • Shrimp

Directions: 
  1. Rinse and Drain the Shrimp. Pat Dry and Season the shrimp. Set aside.
  2. Rinse and Peel the Cucumbers. Slice the cucumbers. Set Aside.
  3. Rinse and Pat Dry the lettuce. Cut if necessary.
  4. Boil water, add broccoli. Cook until tender. About 5 minutes. You want it to still have some crunch.
  5. Julienne cut the red bell pepper. Set Aside.
  6. Boil water and add eggs until boil. Rinse and peel. Slice into four.
  7. Rinse and slice tomatoes in half.
  8. Boil big pot of water and prepare the Wacky mac noodles as package directs. Drain and Set aside.
  9. Prepare the shrimp as you desire. I used an air fryer. I cooked on 350 for about 5 - 10 minutes. Check occasionally so you don't overcook. You can grill on the stove, broil in the oven or fry if you chose. Set aside.
  10. Build your salad. Lettuce, pasta, cucumbers, tomatoes, banana peppers, broccoli, red bell peppers, cheese, shrimp and bacon ranch. So good.
