Chips and dip is one of my favorite snack and game day eat. Chips and dip will be one of the most eaten items at any Super Bowl party. I’m adding this Spicy Rotel dip to my recipes here. Rotel dip has been around for a long time but I switched things up with these Fiery Spice Garlic Pickles. Spicy and cheesy goodness.
Ingredients:
- Fiery Spice Garlic Dill Pickles (5 spears, diced)
- Velveeta Mexican cheese block (cut into pieces)
- Rotel Hot Tomatoes with Habanero (1 can, 10 oz)
- Ground beef (80/20, 3 lbs browned)
- Slap Ya Mama (Hot)
- Smoked paprika (season to taste)
- Tortilla chips
- Kraft Shredded cheese Mexican blend (topping)
- Beef broth (optional if you like your cheese dip runny)
Directions:
- Dice your Pickles. Set aside.
- Cut the Velveeta Cheese into smaller pieces. Set aside.
- Brown the ground beef (5 minutes).
- Season with slap ya mama and smoked paprika.
- Drain the ground beef.
- Add in the rotel hot tomatoes.
- Add in the spicy pickles. Stir.
- Add in the cheese until the cheese is melted. Lower the heat to medium heat. Stir often.
- Optional, taste and add more seasoning if necessary.
- Add to the skillet. Top with a generous amount of cheese.
- Broil the cheese on top (1 – 3 minutes).
- Serve with tortilla chips.
- Enjoy.
