The perfect Egg Salad Sandwich. This egg salad sandwich is made with high quality products. So whether it’s for breakfast or an after workout protein meal or even a quick lunch, this egg salad sandwich is perfection.

I saw Iron Chef Geoffrey Z make a version of this and I had to try it and add a few other items to make it my own. So good.

Make it healthier meal by eating in lettuce cups, carrots, bell peppers or crackers.

Ingredient:

  • 6 boiled eggs
  • French’s Stone Ground Dijon mustard
  • Kewpie mayo
  • Chives
  • Salt and pepper
  • Smoked paprika
  • Bare Crustless bread

Directions:

  1. Boil your eggs.
  2. Run the eggs under cold water.
  3. Peel the eggs in cold water.
  4. Add the eggs to a bowl.
  5. Smash the eggs. *Smash but leave some of the eggs in bigger pieces. It gives the sandwich a better texture.*
  6. Add in the kewpie mayo.
  7. Add in the Dijon mustard.
  8. Add in the salt and pepper.
  9. Stir.
  10. Add in the smoked paprika.
  11. Finish with the chives. Stir.
  12. Spread the egg salad on Crustless bread. The bread made a world of difference. SO Fresh.
  13. Top with the other piece of bread.
  14. Cut across the middle
  15. Enjoy.
