Cajun Salmon Salad

Kickstarting my week with a NEW Salad recipe. This Salmon Pasta Salad was so good. Fun fact about me, I don’t love salads. But I have found ways to prepare salads that have become some of my favorites. Now I love toppings. Having different textures in my salads make for a more enjoyable salad. This Salmon pasta salad was a hit even with my kids. I usually don’t use arugula because it’s not a salad we use. But arugula paired perfectly with this dish.

It’s hard to believe that Crawfish Season is coming to an end. This Louisiana girl loves Crawfish. Since Crawfish season is coming to a close, I think I will add this to Summer, my Cajun Chicken Boil. Using the same ingredients of a regular boil- potatoes, corn, sausage, onions, seafood boil seasoning- and substituting crawfish for chicken wings, along with a new product from Louisiana Fish Fry, the Cajun Drip Viet-Cajun. The Butter Seasoning Mix is available in a few other flavors such as Chili Crush and Twisted Citrus. This is the perfect boil to kick start your Summer.

Homemade Tartar Sauce

Fish Friday is something we have very often. Growing up in Louisiana we ate Fish on Friday every week.  When we eat fried fish tartar sauce is a must have condiment.  We didn’t have any bottled tartar sauce left from the last time we cooked fried fish. So I decided to make my own with the ingredients I had on hand.

Oxtails with Marukan Vinegar

A new collaboration means a new recipe. Marukan Vinegar is “rice vinegar that plays an important role by adding bright, tangy notes, adding flavor to any dish, enhancing flavors of other ingredients as well as balancing sweet, salty, fatty and acidic components of a recipe”. Oxtails can be fatty, so I decided to marinate the oxtails in the Marukan Vinegar that has no sodium or sugar. As well as marinate veggies to top the dish with.
