Buffalo Chicken Salad

A popular game day delight is Buffalo chicken wings. Typically fried wings served with french fries, celery and carrots. Well I decided to switch up our normal game day buffalo chicken wings meal with a healthier version, my Buffalo Chicken salad. This salad was one of my favorite salads that I have prepared in a long time. So easy and the perfect week day meal that can be prepped ahead of time with the exception of the chicken. This salad was tasty, filled with lots of textures and delicious well-balanced flavors. So good. A healthy meal for any day of the week!

Spicy Buffalo Chicken Soup

Fall is right around the corner. One of my favorite things about Fall is eating soup. I love Soup Season. This simple 20 minute soup was so good.
Created this recipe around a brand new product that I found by Campbell’s Soup, Spicy Buffalo Style Cream of Chicken. Beware it is spicy. I topped it with some the NEW sargento red pepper cheese. Yum.
Only a few ingredients will make a delicious soup. Serve with crackers.

I’m back with another 30 minute meal or less. Butter chicken is something that I love to eat at Indian restaurants. I’ve never made it from scratch. But Patak’s makes a delicious sauce in the jar. Monte Cristo Sandwich

I am not much of a sandwich eater, but there is one sandwich that is my favorite and has been for a very long time, Monte Cristo. Bennigan’s Restaurant had the best Monte Cristo. This is the spot that I first enjoyed a Monte Cristo. Many Many years later this is still one of my favorite sandwiches. The Bennigan’s in Louisiana where I used to live closed before we relocated to Texas.

Last week I was craving a Monte Cristo. There isn’t a Bennigan’s here in Houston, so that meant I needed to create my own if I wanted to eat it.
