Jalapeno Chili Cornbread

Most families are officially back at school. For most families this is a very busy time. Busy season can make meal planning hard for some families. Sometimes finding shortcuts makes for easy meal planning and creating meals that are still homecooked. Blue Runner has been around for years. My husband and I both grew up eating Blue Runner beans.

As a recipe creator, I am always creating new recipes. Recipe creating and cooking can be time consuming. I am always looking for shortcuts when creating recipes. I recently worked with a new company, Cass Caps

Oxtails with Marukan Vinegar

A new collaboration means a new recipe. Marukan Vinegar is “rice vinegar that plays an important role by adding bright, tangy notes, adding flavor to any dish, enhancing flavors of other ingredients as well as balancing sweet, salty, fatty and acidic components of a recipe”. Oxtails is a dish we grew up eating. It’s still one of the most requested dishes in our house with my family. Oxtails can be fatty, so I decided to marinate the oxtails in the Marukan Vinegar that has no sodium or sugar. As well as marinate veggies to top the dish with.

Spicy Chicken Sliders

March Madness is here and it has been MADNESS! Omg! Nail biting games, major upsets and just good games. Whether you are watching NCAA Men or Women’s basketball March Madness has been entertaining for sure!!!

Our team, LSU Women’s basketball team is headed to the sweet 16. So we are stoked. But I have to be honest this is our team, but there are a few other teams we’re rooting for, I’m trying to keep my bracket alive!!

There are several big games today.

Here is another March Madness game day eat, my Spicy Chicjen Bacon Ranch sliders. A hit with my family.

I made my own spicy ranch with the NEW spicy ranch seasoning from hidden valley ranch. So so good!

Alfredo Chicken Wings

March Madness is officially here! 🏀🏀 Did you complete your bracket? I’m done with mine. But I think there will be a lot of upsets especially on the women’s side. 

Our house is ready to watch and cheering on our team! 

In time for March Madness I have a new wings recipe, my Alfredo Chicken wings! I wanted to keep things light with this one. Instead of chicken Alfredo pasta just my Alfredo wings.

Air Fried wings, topped with Alfredo sauce, Parmesan and mozzarella cheese and fresh parsley. Finger licking good. An easy no carb version.

Buffalo Chicken Salad

It’s Wellness Wednesday! My Buffalo Chicken Salad. This Salad is made with two of my favorite companies that I work with monthly, Just Meats and Farmhouse Delivery.

Buffalo Chicken salad on a bed of romaine lettuce and mixed greens, sliced buffalo chicken from Just Meats, tomatoes, bacon, shredded cheese, farm fresh eggs, elbow pasta tossed in ranch dressing and fire chili ranch dressing. This salad is one that my entire family loved. Including the picky eater. So good.

This meal was created in under 3o minutes. Busy nights don’t mean eating fast food. So moms who may have kids who are athletes and have late practices or games. This meal can be prepared in a short period of time. I toss in the pasta for carbs for my kids after games or practices.

Lasagna Soup

It’s been cold and rainy here in Houston. Saturdays are my day of rest. It’s my day that I intentionally take moments to be still and stop from all of the busyness. It’s something that I’ve done for years and really centers me as we enter a new week. It’s also my day to catch up on my TV shows and watch movies I haven’t watched yet. I hope that your Saturday is comforting, calm and rewarding. 

I love comfort food. This Lasagna soup was comforting, warm and cheesy. I made my first Lasagna soup over a year ago. This soup has since gone viral and there are so many recipes all over the internet.

Today is the day, the Big LSU Tigers Women’s Basketball vs South Carolina Gamecocks. So many have been anticipating this game. Who will win? Who knows, because they are both really good teams. But what I do know is that it will be a nail-bitter. We can’t wait to watch it.

Cajun Shrimp Chowder

White Beans Wednesday

Growing up in Louisiana my family would prepare White beans every Wednesday. This created the white beans Wednesday. My husband grew up the same way and he is always happy when I make this dish for him. I’m not raising my kids that way, but we do love White beans occasionally. One of meat that we love in our White beans is pork tails. I know everyone won’t appreciate this delicious delicacy. But don’t knock it till you try it. 😂😂😋😋
