Shrimp Cocktail

My family and I are officially back from our vacation in Cancun, MX. It was such a fun, relaxing vacation with gorgeous views. I will share more on here later. 

We ate some delicious food while in Mexico. One of the best dishes was the Shrimp Cocktail. I loved how they switched it up. 

Shrimp Cocktail is a dish I love eating at home on the back patio. It’s the perfect Spring/Summer dish. I made my own version a few weeks ago. It’s so easy and only requires a few ingredients.

As a recipe creator, I am always creating new recipes. Recipe creating and cooking can be time consuming. I am always looking for shortcuts when creating recipes. I recently worked with a new company, Cass Caps

Recently I took a day trip to Lafayette to celebrate my birthday with my grandma. We share a birthday and I couldn’t miss celebrating with her. She’s 93, WOW! What a blessing. We checked out a brand new restaurant called The Chimes. The Chimes is popping right now. A very popular restaurant serving many Louisiana classics like étouffée, fried seafood, burgers, Poboys and much more.

Salt and Vinegar Shrimp

Salt and Vinegar Chips is one of my favorite chips. During my last trips to the grocery store, I picked up a bag. Well I had the bright idea to use the salt and vinegar chips like a panko to fry my shrimp. Yeah that’s what I said, Salt and Vinegar Shrimp.

It’s Fry-Day so we decided to Fry up some shrimp. These poboys were delicious. A twist on our classic shrimp poboys which is very popular back home at this time of year, because it’s Lent Season.

Cajun Shrimp Chowder

The Flats

Visiting Louisiana is always so refreshing for us. The people, the culture is so fun! We miss the friendliness of Louisiana people. Just meeting someone at random and having a big conversation like we’ve been knowing them for years.
There is no place like home. During our last visit we stopped in at a brand new restaurant called The Flats. I stumbled on this restaurant on Instagram. I saved this spot and made sure we had time to stop in for a quick lunch.

Jazz Kitchen Downtown Disney

As we were planning out our last trip, I was researching food spots and was shocked to see that there was a new Louisiana style restaurant that just opened in Downtown Disney. This restaurant Jazz Kitchen Coastal Grill and Patio. Offering a modern, upscale twist to Creole dishes. This restaurant is serving up Louisiana classics that are elevated! This restaurant stays true to what New Orleans cuisine is all about. Ralph Brennan is the driving force behind this amazing restaurant right in the heart of downtown Disney.

Ralph Brennan is known for many restaurants but most importantly Brennan’s in New Orleans. He has been a driving force in the culinary world for years and years. It’s no surprise that this restaurant is so well done. It’s like being whisk away to French quarter New Orleans as you walk into the courtyard of the restaurant. From the jazz music to the smiling faces welcoming you in, you feel like you’re in New Orleans.

1929 Po-boy Kitchen

My family and I visited 1929 several months ago. As I was planning my content for the next few weeks, I made sure to add this one to the list. 1929 is the home of the Oxtail Yakamein. What is this you ask, Oxtail Yakamein is a beef noodle soup with creole seasonings.

Being from Louisiana, I have to admit that I had never eaten this until I visited 1929. I only heard about Yakamein when I was watching a Netflix Show called “Street Food”. They shared all about this New Orleans style dish.

My husband has heard of it and had eaten it prior to us dining at 1929. But he went to college in New Orleans and lived and worked in New Orleans for several years.

In addition to Yakamein, 1929 serves several Louisiana classics like red beans and rice, poor boys, seafood and much more.

Passerella Ristorante and Wine Bar is an Italian Restaurant that offers an elevated dining experience. Serving dishes with fresh ingredients.

This was my very first time at Passerella. My daughter and hubby has dine here before for their daddy/daughter dinner date. They loved it so much, they insisted that I had to try it.

My husband made reservations for us for Easter lunch.

Cajun Collard Green & Cabbage

I have a confession, I’m not much of a vegetable eater? I know, I know, yes I need vegetables. But I have a few that I like. Collard greens are an excellent source of vitamin A, C, and calcium. In addition, rich in vitamin K, and a good source of iron, vitamin B-6, and magnesium. Collard greens are very good for you. This is something that I do eat.

Cabbage is a good source of Vitamin C, high in fiber and Vitamin K.

Collard greens + Cabbage = a very nutritious dish.

Seafood Etouffee

Etouffee is a dish that I grew up eating. Etouffee has a thick, gravy like consisitency that has some sort of seafood. This Louisiana classic is one of the dishes we ate a lot growing up.

I have many recipes of this delicious dish. I was shipped these air fryer silicone liners. This liners make cleaning up easier.

I created an easy Shrimp and Crawfish Etouffee. Yes, I created this dish in the air fryer. You heard it.
