We are in the season of busy. Both of my kids are currently in their Fall Sports which means a change in our schedules. One thing I work hard to do is making sure we have home cooked meals nightly. It requires planning on my part to make sure this happens.I had the opportunity to work with a new brand called “Afia”. Afia is company that creates Mediterranean Spices. Buffalo Chicken Salad

A popular game day delight is Buffalo chicken wings. Typically fried wings served with french fries, celery and carrots. Well I decided to switch up our normal game day buffalo chicken wings meal with a healthier version, my Buffalo Chicken salad. This salad was one of my favorite salads that I have prepared in a long time. So easy and the perfect week day meal that can be prepped ahead of time with the exception of the chicken. This salad was tasty, filled with lots of textures and delicious well-balanced flavors. So good. A healthy meal for any day of the week!

Buffalo Chicken Salad

It’s Wellness Wednesday! My Buffalo Chicken Salad. This Salad is made with two of my favorite companies that I work with monthly, Just Meats and Farmhouse Delivery.

Buffalo Chicken salad on a bed of romaine lettuce and mixed greens, sliced buffalo chicken from Just Meats, tomatoes, bacon, shredded cheese, farm fresh eggs, elbow pasta tossed in ranch dressing and fire chili ranch dressing. This salad is one that my entire family loved. Including the picky eater. So good.

This meal was created in under 3o minutes. Busy nights don’t mean eating fast food. So moms who may have kids who are athletes and have late practices or games. This meal can be prepared in a short period of time. I toss in the pasta for carbs for my kids after games or practices.

Cajun Collard Green & Cabbage

I have a confession, I’m not much of a vegetable eater? I know, I know, yes I need vegetables. But I have a few that I like. Collard greens are an excellent source of vitamin A, C, and calcium. In addition, rich in vitamin K, and a good source of iron, vitamin B-6, and magnesium. Collard greens are very good for you. This is something that I do eat.

Cabbage is a good source of Vitamin C, high in fiber and Vitamin K.

Collard greens + Cabbage = a very nutritious dish.
